Salmon is my husband’s favorite fish and after a while you’ve just got to come up with something new. I love pistachio nuts so I thought, for a change, why not chop them up and roast the salmon with them? I also added a little honey mustard sauce for sweetness. My experiment worked. We love this dish so much we eat it almost every week.
