Mimi’s Penne with Tomato Basil Sauce and Fresh Mozzarella


When I was a kid Wednesday was spaghetti night.  My dad said it just didn’t seem like Wednesday unless he had spaghetti because that’s what his mom always made.  (As a newlywed, he foolishly told my mother her spaghetti just didn’t taste like his mom’s. YIKES!)  So, when Wednesday rolls around I am thinking of pasta and red wine.  One day I just started throwing ingredients into the sauté pan with the tomatoes and ended up with this recipe.   We love it so much my husband and I stuff ourselves every time I make it and I’m at the gym on the treadmill the next day!

(Optional addition:  baked Italian marinated chicken breasts)
