Sue’s Flounder and Tomato Fennel Compote with Dry Vermouth

It’s the middle of the week, you can’t wait for the weekend and you want something quick, easy and tasty that is not take-out. Here’s my answer:  eat like you live in the mediterranean.  A nice piece of fish, a salad, a lightly dressed orzo pasta and, of course, no meal is complete without a glass of wine.
